Hello everyone! Just wanted to update you with what has been going on here at the Thompson house! We tried the tortilla soup tonight and I think it was pretty good. I couldn't find corn tortillas (without all the preservatives) so we just ate ours with Natural Blue Corn Chips. So good! I also forgot the tomatos so I know the soup will be better next time when I include that. Another thing I did was put rice in the soup so that it would be a little more filling. Eric usually needs more than a bowl of soup to fill him up so I thought the rice would help. He says the soup was good too! I figure on making this after the fast and adding chicken.
For those of you who need a mid-afternoon snack, I bought some all natural crunchy peanut butter (Smuckers just has peanuts) and just put that on some apple. It was pretty good after I got over having to stir the peanut butter! It looks funny but was very filling after my lunch!
Lunch today was a salad with dressing by Harvest Farms. They make organic stuff - tasted much better than the stuff I tried last year! :) This was Tuscany Italian and with the apples, cranberries and almonds on the salad it was really good. Eric had a baked potato with his salad.
Oh - a quick way to make potatoes - cut them into cubes and put in a glass dish, put on a little olive oil, then flavor with sea salt or whatever else you like! Put tin foil over the top, bake at 425 until they are as crispy as you like them. Usually 20-25 minutes!
