Hello everyone! I hope that you are as excited as I am about next week and the start of our 10 day fast! This is going to be an incredible time where we can sacrifice something small to see God do great things on our behalf.
I am going to be updating the blog regularly so check back daily for recipes and updates about how the fast is going. For some great recipes to get you started go to www.hollyfurtick.typepad.com and click on Daniel Fast on the right hand side. She has some good recipes including one for tortilla soup that we are having next week for sure! That recipe is at the bottom. Be sure to look in the comment section because some recipes have been left by others.
Be sure to shop this weekend and be ready - everyone can do this! We'll do it together! I'll have snack ideas and breakfast tips also so you will be sure to have plenty to eat - this is not just about salad!

Ingredients:
1 carrot chopped
1 celery stick chopped
1 medium onion chopped
3 garlic cloves, pressed
2 tbsp olive oil
8 c vegetable broth (the expensive kind has 2x the flavor- I found that out by accident)
4 c water
1 can of black beans (Libby's organic have no added salt, found them at Walmart)
16 oz frozen corn
1 red tomato chopped
1 yellow tomato chopped
1/4 c chopped cilantro
2-3 tsp sea salt
1 lime
6 corn tortillas (found at Trader Joes)
Directions:
Heat oil in the bottom of the pot and saute the first 4 ingredients until soft. Add everything else except the tortillas. Low boil for about 30 minutes. Add tortillas. Cook for another 10 minutes.
Serve topped with fresh chopped avocado and green onion.
